Ingredients

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
    Be careful not to burn the garlic.
  4. Add ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink.
    Drain excess fat if desired.
  5. Stir in chili powder, ground cumin, salt, and black pepper until the meat and onions are evenly coated.
  6. Add canned diced tomatoes, kidney beans, and water to the pot. Stir everything to combine.
  7. Bring the chili to a simmer, then reduce heat to low and cook uncovered for 20 minutes, stirring occasionally.
    Simmering allows flavors to meld.
  8. Taste and adjust seasoning with additional salt or chili powder if desired. Serve hot.

  • For extra heat, add 1 diced jalapeño when cooking the onions.
  • You can substitute ground turkey or chicken for a leaner chili.
  • Serve with shredded cheese, sour cream, and chopped green onions for garnish.
